I haven’t blogged in quite awhile. I guess this summer I got caught up in just being in the summer. I did cook, bake, GRILL, but I didn’t take the time to share any of it. Well, it’s September 1st and I get back into the swing of things. The kids are, as they have all started school. So it’s my time too. I think peaches and pears is like the end of summer meeting fall. I have a difficult time even thinking of that F*** word because I know what’s to follow. Anyone that knows me well knows I am a LOVER of ALL things SUMMER! It is with some dismay that I begin blogging again. But here I am, doing my best to embrace it none the less.
Of course when you think “healthier” you certainly don’t think of ice cream as is pictured on top of the cobbler. You’re right. When I was thinking “healthier” I certainly wasn’t thinking of this. BUT, I do love to make home made whipped cream. Although not officially listed here, I’ll quickly share how I make it. Pour a small carton of heavy whipping cream into a bowl. Use a blender in it about 7 minutes until it’s about the consistency of whipped cream. Then add a packet of artificial sweetener or some agave. Viola! Healthier whipped cream for on top of your crisp. Anyways, let’s get to it, the recipe to follow. I would love to hear if you switch it up at all. Blueberries would be a nice addition, I just didn’t have any on hand. Let me know how you enjoy yours. Happy Baking!
I must add in that this is absolutely kid approved!!! and husband approved! and mother approved! You really can’t loose!
- 3 medium size pears diced
- 3 medium size peaches sliced
- ¼ tsp cinnamon
- 3 tsp coconut oil
- 1 Tbsp Agave
- 2 C dry oat meal
- ⅓ C sugar
- ⅓ C softened butter
- Preheat oven at 350
- Spread the diced and sliced fruit evenly across a 9x13 pan
- Drizzle with agave and liquid coconut oil
- Sprinkle with cinnamon
- Blend together oats, butter and sugar as much as possible
- Crumble oat mixture over fruit
- Bake 35-45 minutes until oats are golden brown
- Allow to cool about 5 minutes, and serve with whipped cream or ice cream
